Beef Tenderloin with Woodford Reserve® Bourbon Marinade

Ingredients

1/4 cup Woodford Reserve®
2 cups mild olive oil
1/2 cup finely chopped garlic
1/4 cup finely chopped fresh rosemary
1/4 cup finely chopped fresh ginger
1/4 cup soy sauce

Directions

  1. Mix all ingredients together in a bowl. Place steaks in a shallow pan and pour marinade over steaks. Marinate meat for 6 to 12 hours under refrigeration.
  2. Take meat out of refrigeration, cover with film wrap and let come to room temperature (about 30 minutes) before cooking.
  3. Increase oven temperature to 475°F. Pat tenderloin dry. Rub marinade all over tenderloin. Put tenderloin on rack in roasting pan and roast 10 minutes, then reduce oven temperature to 425°F and cook until thermometer inserted diagonally into center of meat registers 130 degrees F, 20 to 25 minutes for medium-rare.
  4. Let beef stand on rack in pan 10 minutes before serving. Grill or sauté meat to desired doneness. Season with salt and pepper. Serve with your favorite steak sauce, with a splash of Woodford Reserve added.
